Though this reminds me of those Good Seasons salad dressing kits from my childhood, I got this idea from a Jacques Pepin cooking show. The ingredients matter less than the technique, as long as they are high quality and fresh. Vary it to your heart's content.
1 cup extra virgin olive oil
1/4 cup red wine vinegar
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
In a large wide mouth container with lid, such as a cleaned pickle jar, combine olive oil, vinegar, mustard, salt and pepper. Cover tightly. Shake vigorously until completely combined, about 15 seconds. Refrigerated, this will keep two weeks. Add chopped garlic, shallots or a favorite herb for variety. Tarragon is particularly yummy.
