16 ounce package Polenta
1 tablespoon olive oil
4 links spicy turkey sausage, such as Aidell's or Shadybrook Farms
1 large onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 teaspoon salt
Cook Polenta according to package instructions. Meanwhile, in large skillet heat oil. Slice sausage, add to pan. Fry until browned and cooked through, about 5 minutes. Remove and keep warm. Meanwhile, add onions, peppers and salt. Stir, scrapping up bits of carmelized sausage. Add two tablespoons water, if needed. Reduce heat, cover and cook until onions and peppers are are soft, but not carmelized, about 5 minutes. Return sausage to pan, cook additional 2 minutes. Serve over polenta with a spicy Syrah. Or take the night off, order a pizza and grab a Shiraz.
