1 pound grilled flank steak, sliced thin
8 cups lettuce, washed and dried
12 slices of french bread, about 1/2 inch thick
5 ounce package soft garlic and herb cheese, such as Boursin
Heat oven to 400 F. Top each slice of bread with a teaspoon of cheese, place on baking sheet. Bake until cheese is melted and slightly browned, about 9 minutes. Toss greens with vinaigrette, top with sliced steak and cheese croutons. Serve with a Cabernet Franc or Sauvignon Blanc, depending on your mood. Enough for 4 moderately hungry people.
