Spanish Tortilla or Omelette
This classic Tapas dish can be served hot, cold or any where in between. Simple to make and very flexible you can add zucchini, ham, or a mix of herbs. Serve it surrounded by olives, ham, lovely Spanish Wines and good friends.
3 tablespoon Spanish olive oil
1 onion, thinly sliced into half moons
1 large potato, thinly sliced into half moons
1/2 bell pepper, roughly chopped
6 large eggs
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
In a non stick skillet, heat 2 tablespoons of the olive oil. Add onions, potatoes and bell pepper; cook over medium-low heat until softened, about 10 minutes. Remove from pan, let cool slightly. Meanwhile, lightly beat eggs with salt and pepper. Add potato onion mixture to eggs, mix well.
Wipe skillet and heat remaining olive oil. Add egg mixture. Stir once, let set, loosen sides with a spatula. Turn heat to low, cover and slowly cook until firm, about 15-20 minutes. This slow cooking is the trick to a real Spanish Tortilla, so don’t rush it.
To cook the other side, you can just pop it under the broiler like they do in Italy, or place a large plate or flat cover over the skillet. In one motion flip the tortilla on to the plate and slide it back into the skillet. Cook 5 additional minutes. Serve with a salad or as part of a Tapas menu.









are we talking large russet potatoes? ive been expirementing with my own spanish tortilla and i ended up leavig out potatoes and going with potato chips instead with spinach and chorizo. but maybe ive been using the wrong potatoes. love the site and i caught your video on youtube. keep up the good work.

Do the potatoes really get soft by sauteeing them in a little bit of oil? My boyfriend makes tortilla but he deep fries the potatoes in about 1/2 cup of oil for about 10 mins first. He does the flipping method. He slides the tortilla on a plate and then flips it back into the skillet.

Speaking on Spanish cuisine, it is impossible not to mention the tapas (tapas) - is a Spanish variety of light snacks. In any bar or cafe to serve at any time and to any order wine or beer.
Tapas - may be as regular olives or bread, chips or olives, and various dishes ispaskoy cuisine - ensalada rusa, tortilla, and even the famous paella.

The first time I tried Spanish tortilla, I was in the most beautiful restaurant of my town, and it tated deliociusly. I wanted to cook it home, but I did not have the recipe ! Luckily, I found it in this site
