1 pound ground sirloin beef or ground round (or turkey, 93%) from a good butcher
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon vegetable oil
4 hamburger buns (Brioche are delicious)

Prepare grill to a medium-hot flame. Meanwhile, carefully divide meat into four balls, and flatten to about 1/2 inch thickness with a slight indentation in the center. Season with salt and pepper on both sides. With brush or oil-soaked paper towel, lightly oil grill.
Place patties on grill for about 3 minutes. Flip and cook for additional 2 minutes for rare or 3 minutes for medium. (If using turkey, grill until cooked through and no longer pink, about 4 minutes per side) RESIST THE URGE TO PRESS DOWN WITH YOUR SPATULA!
Toast buns, and serve with your favorite toppings and a lovely Rhone Valley wine.
