Okay, the biggest turkey day of the year is behind us, but I make this dish through out the holiday season when entertaining. It's a slightly simplified version of a Julia Child/Jacques Pepin recipe, but it's still pretty labor intensive. However, the results are totally worth the effort. Of course, it works fabulously well with wine.
